Paneer Tikka

Paneer Tikka is a popular Indian appetizer, where chunks of paneer (Indian cottage cheese) are marinated in a spiced yogurt mixture and grilled or baked until golden and slightly charred. Here’s a simple and delicious recipe to make Paneer Tikka at home:

Ingredients:

For the marinade:

  • 250g paneer (cubed, medium or thick slices)
  • 1/2 cup thick yogurt (preferably hung curd or Greek yogurt)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 tablespoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • 1 tablespoon kasuri methi (dried fenugreek leaves)
  • 1 tablespoon mustard oil (or any vegetable oil)

For garnish (optional):

  • Fresh coriander leaves (chopped)
  • Lemon wedges
  • Onion rings
  • Chaat masala (optional)

Instructions:

1. Prepare the Marinade:

  • In a large mixing bowl, whisk the yogurt until smooth and creamy.
  • Add ginger-garlic paste, lemon juice, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, and salt. Mix everything well.
  • Add kasuri methi and mustard oil to the mixture, and stir to combine.

2. Marinate the Paneer:

  • Cut the paneer into cubes or slabs, depending on your preference.
  • Add the paneer pieces to the marinade, ensuring each piece is well coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 1 hour. If you have more time, marinating overnight will give better results.

3. Grill or Bake:

You can either grill or bake the paneer tikka for that smoky flavor. Here are the two methods:

A. Grilling (on a gas grill or tandoor):

  • Preheat the grill to medium-high heat.
  • Skewer the marinated paneer pieces onto metal or wooden skewers (soaked in water for 20 minutes if using wooden skewers).
  • Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the paneer is slightly charred and golden brown on all sides.
  • If you have a gas burner, you can also place the skewers directly over the flame for a few seconds to get a smoky flavor.

B. Baking (in the oven):

  • Preheat the oven to 200°C (392°F). Place the paneer pieces on a baking tray lined with parchment paper.
  • Bake for 12-15 minutes or until the paneer is cooked through and slightly charred.
  • Optionally, you can broil for 2-3 minutes at the end for a smoky effect.

4. Serve:

  • Once cooked, remove the paneer tikka from the skewers and arrange on a serving platter.
  • Garnish with fresh coriander leaves, onion rings, and lemon wedges.
  • Optionally, sprinkle a bit of chaat masala for extra flavor.

Serving Suggestions:

Paneer tikka is best served hot with a side of mint chutney and onion salad. You can also enjoy it with naan or roti as a main course or serve it as a side dish with rice.
