Chicken Shorba is a flavorful and aromatic Indian-style chicken soup. It’s a light, spiced broth made with chicken, whole spices, and herbs that is both nourishing and comforting. The word “shorba” refers to a soup or broth, and it can vary in consistency, from a clear soup to a thicker, stew-like consistency. Here’s a simple and tasty recipe for making Chicken Shorba at home:

Ingredients:

For the Chicken Broth:

  • 500g chicken (bone-in pieces like legs or thighs work best for flavor)
  • 1 medium onion, finely chopped
  • 2 tomatoes, chopped
  • 1-inch piece of ginger, crushed
  • 4-5 garlic cloves, crushed
  • 1-2 green chilies (optional, for heat)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2-3 black cardamom pods
  • 3-4 green cardamom pods
  • 1-2 bay leaves
  • 4-5 whole black peppercorns
  • 1 cinnamon stick
  • 1 tablespoon coriander powder
  • Salt to taste
  • 5 cups water (adjust based on desired consistency)

For Garnishing:

  • Fresh coriander leaves (chopped)
  • 1 tablespoon lemon juice or to taste
  • Optional: Fried onions (for a garnish)

Instructions:

1. Prepare the Chicken and Broth:

  • Wash the chicken pieces thoroughly. You can use bone-in chicken for more flavor, such as drumsticks, thighs, or a combination.
  • In a large pot or pressure cooker, heat a little oil (or ghee) over medium heat.
  • Add cumin seeds, cardamom pods (both black and green), cinnamon stick, bay leaves, and black peppercorns. Sauté for about 30 seconds until they release their fragrance.
  • Add the finely chopped onions and sauté until golden brown.
  • Add crushed ginger and garlic, and sauté for another minute until the raw smell disappears.
  • Add chopped tomatoes and cook until they soften and start breaking down (about 5 minutes).

2. Cook the Chicken:

  • Add the chicken pieces to the pot and cook for about 5 minutes, stirring occasionally, until the chicken is slightly browned.
  • Add turmeric powder, coriander powder, and salt. Mix well.
  • Pour in the 5 cups of water (you can add more for a thinner broth or less for a thicker soup). Stir everything to combine.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes (or 15-20 minutes in a pressure cooker, cook for 2 whistles on medium heat).
  • If using a pressure cooker, after 2 whistles, turn off the heat and let it release pressure naturally.

3. Strain the Soup (Optional, for Clear Broth):

  • Once the chicken is cooked and the flavors have infused the broth, you can strain the soup for a clear consistency. Remove the chicken pieces and strain the broth through a fine mesh sieve into another pot, pressing the solids to extract maximum flavor.
  • Alternatively, if you prefer a more rustic style, you can skip straining and leave the chicken pieces in the soup.

4. Shred the Chicken (If Desired):

  • If you’ve strained the soup and removed the chicken bones, shred the cooked chicken meat into bite-sized pieces and return it to the broth. This step adds texture and protein to the shorba.

5. Final Seasoning and Garnish:

  • Taste the broth and adjust the seasoning (salt, pepper, or lemon juice) to your liking.
  • Add fresh coriander leaves for a burst of flavor.
  • If you want some extra flavor, you can also add a squeeze of lemon juice.

6. Serve:

  • Ladle the chicken shorba into bowls and garnish with additional fresh coriander leaves, fried onions, and a squeeze of lemon.
  • Serve hot with a side of naan, paratha, or rice for a complete meal.

  • Bread or Naan: Serve this with crispy naan or a slice of toasted bread to soak up the delicious broth.
  • Rice: You can pair it with plain steamed rice for a comforting, wholesome meal.
  • Condiments: For extra flavor, serve it with a side of mint chutney or a tangy lemon pickle.

Tips:

  • You can adjust the consistency of the shorba by adding more or less water based on your preference (thicker or more like a soup).
  • If you want to make it richer, you can add a splash of cream or yogurt just before serving.
  • You can also add vegetables like carrots or potatoes to the broth to make it more hearty.
