Paneer Tofani is a delicious and spicy Indian paneer curry with a rich, creamy gravy. Here’s how you can make it at home:
Ingredients
For the Paneer Marinade:
- 200g paneer (cubed)
- 2 tbsp curd (yogurt)
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ½ tsp garam masala
- 1 tsp ginger-garlic paste
- ½ tsp salt
- 1 tbsp cornflour
For the Gravy:
- 2 tbsp oil
- 1 tbsp butter
- 1 tsp cumin seeds
- 1 bay leaf
- 1 onion (finely chopped)
- 1 tbsp ginger-garlic paste
- 2 tomatoes (pureed)
- ½ cup capsicum (diced)
- 1 tsp red chili powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ cup fresh cream
- ½ cup milk
- 1 tbsp kasuri methi (dried fenugreek leaves)
- Salt to taste
- 1 tbsp fresh coriander (chopped)
Instructions
Step 1: Marinate & Fry the Paneer
- In a bowl, mix curd, red chili powder, turmeric, garam masala, ginger-garlic paste, salt, and cornflour.
- Add the paneer cubes and coat well. Let it rest for 15 minutes.
- Heat 1 tbsp oil in a pan and lightly fry the paneer cubes until golden brown. Set aside.
Step 2: Prepare the Gravy
- Heat oil and butter in a pan. Add cumin seeds and bay leaf.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté until the raw smell disappears.
- Add tomato puree and cook until oil starts to separate.
- Add red chili powder, turmeric, coriander powder, and salt. Mix well.
- Add capsicum and sauté for 2 minutes.
Step 3: Final Touch
- Add fresh cream and milk, stirring continuously to get a rich texture.
- Add kasuri methi and garam masala for extra flavor.
- Add the fried paneer and simmer for 5 minutes.
- Garnish with fresh coriander and serve hot with naan, roti, or jeera rice.
